  • 3 tablespoons cumin Brings warmth and earthiness.
  • 1 tablespoon paprika Adds color and a mild peppery taste.
  • 1 teaspoon chipotle powder Gives a smoky kick.
  • ½ teaspoon cayenne pepper Adjust according to heat preference.
  • ½ tablespoon salt Enhances all flavors.
  • 1 teaspoon white pepper Offers a different kind of spiciness.
  • ½ teaspoon baking soda Optional; can help reduce acidity.

Method

  1. In a large dutch oven, sauté diced peppers and onions until they become translucent and start caramelizing.
  2. Add seasonings (minus the baking soda) and cook for 1 to 2 minutes, stirring continuously to prevent burning.
  3. Add ground meat and brown until just done; it's okay if there’s still some pink remaining.
  4. Pour in the tomato sauce, diced tomatoes, water, and tomato paste, stirring well to combine.
  5. Bring everything to a gentle simmer over medium-low heat and cook for about 15 minutes before adding in the drained beans.
  6. Stir in the baking soda; continue cooking over medium heat until bubbles subside before removing from heat.
