Method

  1. Prepare the Dough: Combine 2 cups bread flour, 2 tsp garlic powder, 1 tsp salt, and 1 tsp active dry yeast in a mixing bowl. Gradually add in 1 cup warm water mixed with 1/2 tsp squid ink while stirring until a dough forms. Knead for about 5-10 minutes until smooth, then place it in an oiled bowl to rise until doubled in size.
  2. Sauté Vegetables: In a skillet over medium heat, melt 2 Tbsp butter before adding 1/2 cup thinly sliced shallots and 4-5 cloves sliced garlic. Cook until translucent and fragrant, about 3-4 minutes before adding in 4 oz button mushrooms shaped into skulls.
  3. Create Flatbreads: Once your dough has risen, divide it into four equal pieces and roll each out into flat rounds on a floured surface. Preheat your oven or grill to high heat while preparing toppings.
  4. Assemble Your Pizzas: Spread a layer of pesto sauce on each flatbread followed by sautéed mushrooms, shallots, garlic mixture, and sprinkle generously with Green Pesto Gouda cheese and fresh herbs on top.
  5. Bake Until Golden Brown: Bake pizzas in your preheated oven or grill for about 10-15 minutes or until edges are crispy and cheese is bubbling.
  6. Finish & Serve: Drizzle balsamic vinegar mixed with honey over each flatbread before slicing into wedges for serving.
