Ingredients

  • 1 ⅓ cups uncooked long grain white rice Choose long grain rice for the best texture.
  • 2 ⅔ cups chicken broth Use low-sodium broth for more control over saltiness.
  • 1 pound large or jumbo shrimp (peeled and de-veined) Fresh shrimp enhances flavor but frozen works well too.
  • 4 tablespoons butter (melted, divided) Butter adds richness and depth to the dish.
  • 1 teaspoon minced garlic Fresh garlic brings aromatic qualities that elevate the dish.
  • 1 ½ teaspoons paprika Paprika adds color and mild sweetness.
  • 1 teaspoon salt Enhances overall flavor balance in the dish.
  • 1 teaspoon garlic powder For an extra layer of garlicky goodness.
  • ½ teaspoon cracked black pepper Adds a subtle heat and complexity.
  • ½ teaspoon onion powder Complements the garlic nicely in flavor profile.
  • ½ teaspoon dried oregano For earthy undertones in the seasoning mix.
  • ½ teaspoon cayenne pepper Adjust based on your heat preference; it packs a punch!
  • ¼ teaspoon crushed red pepper flakes Adds additional spice to kick things up a notch.

Method

  1. Whisk together all of the ingredients for the cajun seasoning until well blended. Melt 2 tablespoons of butter in a large skillet over medium heat, then stir in minced garlic along with half of the cajun seasoning along with the uncooked rice.
  2. Pour in 2 ⅔ cups of chicken broth and bring everything to a boil before reducing to a simmer. Cover the skillet and let it cook for about 15 minutes, stirring once or twice throughout to ensure even cooking.
  3. While the rice is cooking, prepare the shrimp by mixing together the remaining melted butter with the rest of the cajun seasoning in a separate bowl. Once mixed, pour this flavorful mixture over the shrimp, tossing to coat them evenly.
  4. After cooking, carefully stir the seasoned shrimp into the rice mixture in the skillet. Cover again and cook for an additional 3-5 minutes until shrimp appears pink and opaque.
  5. Once cooked, garnish your Cajun Shrimp and Rice Skillet with chopped parsley if desired before serving hot on plates or bowls.
