Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 2 tbsp butter (for sauce)
  • as needed cooked pasta (optional for serving)

Method

  1. Begin by mincing garlic and squeezing fresh lemon juice into a bowl. This ensures you have everything ready before cooking begins, maximizing efficiency during preparation time.
  2. In a skillet over medium-high heat, add olive oil and heat until shimmering. Season both sides of your chicken breasts with salt and pepper before placing them in the pan to sear until they turn golden brown on each side, which enhances flavor through caramelization.
  3. Once seared, carefully layer the chicken in your crockpot. Top it with minced garlic and capers before pouring in the low-sodium chicken broth and freshly squeezed lemon juice for that tangy kick.
  4. Sprinkle Italian seasoning generously over everything in the crockpot. Cover and cook on low for about six hours or high for three hours until your chicken is tender and infused with all those delightful flavors.
  5. After cooking time is complete, remove the chicken from the pot carefully. Whisk butter into the remaining juices in the crockpot to create a rich sauce; serve this over your chicken along with cooked pasta or rice, garnished with fresh parsley for an appealing presentation.
