Ingredients

Dough Ingredients
  • 3 cups all-purpose flour plus extra for dusting
  • 1 cup warm water about 110°F
  • 2 teaspoons active dry yeast or instant yeast
  • 1 teaspoon salt preferably sea salt
  • 1 tablespoon sugar to feed the yeast
Topping Ingredients
  • 1 tablespoon cornmeal for dusting the baking sheet
  • 1 tablespoon water for misting the baguettes before baking

Method

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Shape the Baguettes
  1. Preheat the oven to 425°F (220°C) and place a baking sheet in the oven to heat.
  2. Punch down the risen dough and divide it into 4 equal pieces.
  3. Shape each piece into a mini baguette (about 8 inches long) and place them on a cornmeal-dusted baking sheet.
  4. Cover with a towel and let them rise for another 30 minutes.
Bake the Baguettes
  1. Using a sharp knife, make a few diagonal slashes on top of each baguette.
  2. Mist the baguettes with water and place them in the preheated oven.
  3. Bake for 20-25 minutes until golden brown and crusty.
  4. Remove from the oven and let cool on a wire rack before serving.
