  • 1/4 cup parmesan cheese Shaved or grated, offers a salty finish.

Method

  1. Sauté Aromatics: Begin by heating olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until they are fragrant and translucent, about 3-4 minutes.
  2. Brown the Meat: Next, add the ground beef to the pot. Cook until browned, breaking it up into smaller pieces as it cooks; this should take about 5-7 minutes.
  3. Combine Tomato Ingredients: Once the meat is fully cooked, stir in the diced tomatoes, tomato sauce or puree, and tomato paste. Mix everything well so that all ingredients are evenly coated.
  4. Add Stocks and Seasonings: Pour in the chicken stock along with water if needed for desired texture; season with Italian herbs, salt, and pepper. Bring it all to a boil before reducing heat to let it simmer gently.
  5. Cook Pasta: Stir in uncooked bowtie pasta once the soup is simmering nicely; let it cook according to package instructions until al dente, about 8-10 minutes.
  6. Finish with Cheese and Herbs: Once pasta is cooked through, remove from heat and stir in ricotta cheese until creamy; top with shredded mozzarella and parmesan cheese before garnishing with fresh parsley for an extra touch of flavor!
