  • 1 cup spinach fresh, chopped
  • 1 tbsp garlic minced
Panini
  • 4 slices ciabatta bread or any preferred bread
  • 1 tbsp butter for spreading
  • 1 cup mozzarella cheese sliced

Method

Marinate Chicken
  1. In a mixing bowl, combine honey, black pepper, olive oil, and salt. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Cook Pasta
  1. In a pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
Grill Chicken

Prepare Sauce
  1. In the same pot, add garlic and sauté for 1 minute. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and add spinach. Mix in cooked pasta.
Assemble Panini
  1. Spread butter on one side of each ciabatta slice. Layer mozzarella cheese and sliced grilled chicken between two slices. Grill in a panini press until golden brown and cheese is melted.
Serve
