  • 1 large onion diced; a sweet onion works best for sweetness.
  • 1 lb. ground beef or lamb or turkey; choose your favorite protein for a customized taste.
  • 6 oz. tomato paste provides a rich base and deep flavor to the dish.
  • 1 teaspoon kosher salt plus more if needed; salt enhances all the other flavors in the recipe.
  • to taste black pepper adjust according to your preference for spice.
  • 1/4 teaspoon ground cinnamon adds warmth and depth to the flavor profile.
  • 1 heaping teaspoon dried spearmint or 1 tablespoon fresh chopped mint; mint gives a refreshing touch.
  • 4 cups water essential for cooking the orzo properly.
  • 1 cup orzo whole wheat or regular is fine; this pasta is key to achieving that comforting texture.
  • grated romano cheese for serving (optional); adds flavor and richness.
  • fresh chopped mint or parsley for serving (optional); adds flavor and richness.
  • extra-virgin olive oil for serving (optional); adds flavor and richness.

Method

  1. In a large heavy pot with a lid, heat the olive oil over medium heat. Add the diced onion and cook until softened and starting to brown, about 3 minutes. Next, add the ground beef and cook until fully browned, breaking apart as it cooks, approximately 5 minutes.
  2. After browning the meat, stir in the tomato paste along with kosher salt, black pepper to taste, ground cinnamon, and dried spearmint. Cook this mixture until the tomato paste begins to brown slightly, about two minutes.
  3. Next, add the water into the pot; bring it all to a boil while stirring occasionally.
  4. Once boiling, add in the orzo; stir well before covering the pot with a lid. Let it simmer on low heat while stirring occasionally until the orzo is cooked through, approximately 20 minutes.
  5. Once cooked, serve your delicious Manestra warm with optional toppings like grated romano cheese, fresh chopped mint or parsley, and extra-virgin olive oil if desired.
