  • 3-4 ounces sun-dried tomatoes Chopped, these add amazing depth of flavor.
  • 1 medium yellow onion Diced, provides sweetness and aroma.
  • 4 cloves garlic Minced or pressed, enhances the overall flavor profile.
  • 3 ounces tomato paste Thickens the soup and adds richness.
  • 4 cups chicken broth The base of your soup – use low-sodium if preferred.
  • 1/4 cup basil Chopped, fresh herbs brighten up the dish.
  • 2 cups rotini pasta Dry, adds heartiness to the soup.
  • 2 teaspoons Italian seasoning A blend of herbs adds complexity.
  • 1/2 cup heavy cream Creates a luscious, creamy texture.
  • salt & pepper To taste, essential for enhancing flavor.
  • parmesan For garnish, a sprinkle adds a savory finish.

Method

  1. Start by gathering all your ingredients and prepping them accordingly. Chop the sun-dried tomatoes, dice the onion, and mince the garlic to ensure everything is ready for cooking.
  2. In a large pot, heat some olive oil over medium heat and add the diced onion and minced garlic. Sauté until they are soft and slightly browned, releasing their wonderful aroma into your kitchen.
  3. Once your aromatics are ready, stir in the chopped sun-dried tomatoes along with the fresh basil. Allow them to cook together for a minute to meld their flavors beautifully.
  4. Mix in the tomato paste thoroughly with your sautéed ingredients before adding in the shredded chicken. Pour in the chicken broth next; it will serve as the flavorful base of your soup.
  5. Bring everything to a boil before reducing it to a simmer. Season with salt, pepper, and Italian seasoning; let it simmer gently so all flavors can develop fully.
  6. Stir in the dry rotini pasta and cook according to package instructions until al dente, usually around 10-12 minutes. After cooking, turn off the heat and mix in heavy cream; taste for final seasoning adjustments before serving hot garnished with parmesan cheese.
