Ingredients

  • 2 medium zucchinis Slice into half-moons for even cooking.
  • 1 piece red bell pepper Diced to add sweetness and color.
  • 1 small red onion Thinly sliced for a mild flavor.
  • 2 cloves garlic Minced to infuse richness into the dish.
  • 1 cup cherry tomatoes Halved to provide juiciness and freshness.
  • ¼ cup sun-dried tomatoes Chopped for depth of flavor (oil-packed and drained).
  • ½ cup Kalamata olives Pitted and halved for a briny kick.
  • 1 tablespoon capers Optional, but adds a tangy element.
  • 2 tablespoons olive oil For sautéing and enhancing flavors.
  • 1 teaspoon dried oregano To bring out the Mediterranean essence.
  • ½ teaspoon smoked paprika Adds warmth and depth to the dish.
  • Pinch chili flakes Optional, for those who love a bit of heat.
  • 2 tablespoons chopped fresh parsley or basil To brighten the dish with freshness.
  • Juice of ½ lemon A splash to elevate all the flavors.
  • Crumpled vegan feta or regular feta Optional, for extra creaminess and tang.

Method

  1. Heat olive oil in a large skillet over medium heat. Add the thinly sliced onion and sauté for about 2–3 minutes until it begins to soften.
  2. Add minced garlic, diced red bell pepper, and half-moon sliced zucchini to the skillet. Cook everything together for approximately 6–8 minutes, stirring occasionally until the vegetables are tender and lightly golden.
  3. Stir in the halved cherry tomatoes, chopped sun-dried tomatoes, halved Kalamata olives, and capers if using. Allow this mixture to cook for another 3–4 minutes so that all the flavors meld together beautifully.
  4. Season your skillet with dried oregano, smoked paprika, salt, black pepper, and chili flakes if desired. Briefly sauté to ensure that all spices are well incorporated into the vegetables.
  5. Remove from heat and stir in lemon juice along with freshly chopped herbs like parsley or basil. If you like, garnish with crumbled feta before serving warm alongside couscous, quinoa, or crusty bread.
