Prepare the Truffle Mixture
- In a mixing bowl, combine the crushed Oreo cookies, softened cream cheese, and peppermint extract. Mix until well combined.
- Chill the mixture in the refrigerator for about 15 minutes to make it easier to handle.
Form the Truffles
- Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls.
- Place the truffles on a baking sheet lined with parchment paper.
Coat the Truffles
- In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted chocolate, ensuring they are fully coated, then return to the baking sheet.
- Sprinkle crushed mint candies on top of each truffle before the chocolate sets.
Chill and Serve
- Refrigerate the coated truffles for about 30 minutes or until the chocolate is firm.
- Serve chilled and enjoy your Mint Oreo Truffles!
