  • 1 onion, diced
  • 2 medium carrots, sliced
  • 2-4 tablespoons red curry paste
  • 1 tablespoon freshly grated ginger
  • 4 garlic cloves, minced

  • 3 oz. rice vermicelli noodles
  • assorted vegetables (cremini mushrooms, bell pepper, cauliflower)
  • fresh herbs (cilantro, basil)
  • to taste lime juice

Method

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sear the chicken thighs until golden brown on both sides. Remove from pot.
  2. In the same pot, sauté onions and carrots until softened. Add red curry paste, ginger, and garlic; cook for another minute.
  3. Return the seared chicken to the pot with chicken broth and coconut milk. Add soy sauce, fish sauce, brown sugar, kaffir lime leaves, salt, and pepper; bring to a boil and simmer for 15 minutes.
  4. Remove chicken to shred it before returning it back into the pot along with mushrooms, bell pepper, cauliflower, and broken rice noodles. Simmer for another 5 minutes until noodles are tender.

Notes

Feel free to swap chicken for shrimp or tofu for a plant-based version. Extra veggies can ramp up the nutrition, and lime zest adds extra zing.
