Ingredients

  • 6 pieces rice spring roll papers Essential for wrapping your delicious fillings.
  • 1 piece red pepper Thinly sliced for a sweet crunch.
  • 2 pieces carrots Thinly sliced to add color and texture.
  • 1 piece yellow bell pepper Provides sweetness and vibrant color.
  • 1 large bunch mint leaves Adds freshness to every bite.
  • 1 large bunch cilantro Offers a burst of herbal flavor.
  • ¼ piece red cabbage Thinly sliced for extra crunch and color.
  • ½ cup peanut butter The base of your creamy dipping sauce.
  • 1 ½ tablespoons low sodium soy sauce For savory depth in the sauce.
  • 1 tablespoon raw honey Adds natural sweetness to balance flavors.
  • 2 tablespoons freshly squeezed lime juice Brings brightness to the sauce.
  • ½ teaspoon chili paste Introduces a spicy kick to the mix.
  • 1 teaspoon fresh grated ginger Infuses warmth and zing into the sauce.

Method

  1. Start by washing all your vegetables thoroughly. Thinly slice the red pepper, carrots, yellow bell pepper, and red cabbage so they are ready to be rolled into your spring rolls.
  2. Fill a shallow dish or plate with warm water and gently dip one rice paper into it for about 15 seconds until it becomes pliable but not too soft.
  3. Lay the softened rice paper on a clean surface or cutting board. Place a small handful of each vegetable in the center of the wrapper along with some mint and cilantro leaves.
  4. Fold in the sides of the rice paper over the filling first, then roll from the bottom up tightly but gently until fully wrapped.
  5. In a bowl, combine peanut butter, low sodium soy sauce, raw honey, lime juice, chili paste, and grated ginger; whisk until smooth and well blended.
  6. Serve your rainbow spring rolls alongside the ginger peanut sauce for dipping. Enjoy this colorful treat as an appetizer or light meal!
