Start by washing the chicken pieces thoroughly under cold water and patting them dry with paper towels.
In a large skillet over medium heat, toast the guajillo, pasilla, and ancho chiles until fragrant but not burnt—this usually takes about 5-7 minutes.
In another pot filled with water, add the chicken pieces along with celery sticks, quartered onion, bell pepper slices, cilantro sprigs, and minced garlic; season with salt and pepper before bringing it all to a boil.
Blend the toasted chiles along with roma tomato, tomatillo, raisins, sesame seeds, almonds, pepitas, garlic slices, peppercorns, cloves, bolillo, corn tortilla, Ritz crackers, Mexican chocolate, salt, and sugar until smooth.
Once chicken is tender, remove from broth, let cool slightly, then shred meat before returning it all back into pot together with blended mole sauce, simmering gently allowing flavors to meld together.
Serve warm garnished with fresh cilantro alongside rice, beans, and corn tortillas.
